Stifatho 1 kg chuck steak, cut into cubes 1/4 cup olive oil 750 g whole baby onions 3 cloves garlic, cut in half lengthways 1/2 cup red wine 1 cinnamon stick 4 whole cloves 1 bay leaf 1 tbsp red wine vinegar 2 tbsp tomato paste 2 tbsp currants 1. Heat the oil, add the onions and stir for 5 minutes, or until golden. Remove from the pan and drain on paper towels. 2. Add the meat all at once and stir over high heat for 10 minutes or until well-browned and almost all liquid is absorbed. 3. Add garlic, wine, spices, bay leaf, vinegar, tomato paste, 1/4 tsp cracked black pepper, some salt, and 1.5 cups water to the pain, and bring to boil. Reduce the heat, cover and simmer for 1 hour. 4. Return onions to the pan, add the currants, stir. Simmer uncovered for 15 minutes. Discard cinnamon before serving.
