Fish solyanka 1-1.5 lbs fish chunks (mixed chowder fish usually works, sometimes I do half salmon and half cod) 4-5 pickles 1-2 onions, chopped 1 bay leaf 2 tbsp tomato paste 2 tbsp capers 2 tbsp butter juice of 1/2 or 1 lemon 12 cups of water chopped dill and/or parsley for serving olives for serving (I prefer green) 1. Sautee the onions in butter. When soft but not yet brown, add tomato paste and pickles, sautee 5 minutes. 2. Add water, bay leaf, capers, some salt, a bit of pepper (freshly ground and maybe mixed pepper is good), bring to boil, cook 2 minutes. 3. Add fish and lemon juice, cook 5 minutes or until the fish is cookied through. 4. Serve garnished with olives, dill, and parsley.
