Cold beet soup Bunch of beets with greens (approx 3-4 beets) juice of half a lemon salt to taste approx 12 cups of water For garnish (all optional): chopped boiled potatoes chopped cucumbers chopped dill chopped scallions boiled eggs, sliced in half sour cream or plain yogurt Separately cut the beets, beet stems, and beet greens. Boil beets in water for about 15 minutes. Add stems, cook 5 minutes more. Add greens and salt, bring to the boil, turn off the heat. Add lemon juice. Chill until cold. Put some of the chopped garnish into each bowl, pour the soup over, put half an egg and a bit of sour cream or yogurt on top.
